What is the Kitchenette?

The project aims to design and create a powdery food system by applying the dehydrated technique to deform nutritious kitchen waste, such as shrimp shells and fruit peels, into food powder.

It allows individuals from different cultural backgrounds to deform the almost-expired food into materials for tomorrow’s dinner in their own kitchen, using their imagination to creatively reform the food appearance and arrange the taste of combinations by surprise.

Collect the Materials and Dehydrate

The dehydrator is optional since you can use your microwave or oven on low heat. Hydrating methods that are more energetically efficient include air drying, sun drying (although this can destroy vitamin A in plant foods), and even salting or smoking.

Try and Create Your Own Combinations

We all know what foods we like, and what we think goes together in a recipe, but dust recipes can be an opportunity to try out new combinations, especially since you may have access to ingredients that you wouldn't normally.

Hello, I'm Shandi YC Hsin, an interdisciplinary artist whose works integrate installation, video, and biological sciences, and explore the intersection of art and science.

My recent work investigates how food can be the medium for time, memory, emotion, and space. Through her art, she invites viewers to imagine alternative futures and to reconsider our relationship with food. I have been selected as a resident artist by many prestigious international art institutions, including Grey Projects in Singapore, Medialab-Prado in Spain, and V2_ Institute for Unstable Media in the Netherlands, and was also awarded the Technology and Art Talent Overseas Residency Creation Program grant by the National Taiwan Museum of Fine Arts.
